Food Trend of the Week: Tampered-with Whipped Cream

Imagine a soft dollop of brandy infused cream; a boozy pillow atop your mug of hot coffee. A slight of hand folds crushed cocoa nibs quickly and carefully into a bowl of luscious whipped white; the perfect addition to a scoop of chocolate ice cream. And speaking of chocolate, what about chocolate whipped cream? Throw your guests off; whip cream and cocoa together for an instant mousse. Splatter on fruit or eat straight from the bowl. Crushed raspberries add a punch of brightness and colour; fold into already whipped cream for a festive topper on a winter pavlova. And for any holiday treat, crystallized ginger adds bite and sparkle to the ordinary blend.

Whipped cream deserves to be more than a side dish to dessert.
