One of the perks of living in Montreal is the variety of ingredients readily available to the home cook. And different ingredients at that. In Nova Scotia, it's hard to get yours hands on duck, let alone duck sausage. In Montreal, duck is everywhere. It is a French city, after all.
I was ecstatic to find these beauties at the Atwater Market in Montreal. Duck and tarragon is an amazing combination: rich and fatty (as sausage should be) but with an incredible lightness in texture and earthiness from the tarragon. I served these simply with local asparagus, sauteed onions, olive-sour dough (also from the market: Boulangerie Premiere Moisson), and two kinds of mustard. A perfect summer meal in the city.
